Apple Pie Pancakes

Apple Pie Pancakes | VG | GF | RSF |

Ingredients

  • 1 cup oat flour

  • 1 tsp cinnamon

  • 1/2 tsp baking powder

  • pinch of salt

  • 1 cup unsweetened almond milk (or non dairy milk of choice)

  • 1 flax egg (1 tablespoon ground flax seed + 3 tablespoons water)

  • 1 tablespoon maple syrup

  • 1 teaspoon vanilla extract

  • 2/3 cup shredded apple (about half an apple)

  • coconut oil for cooking

Instructions

  1. In a large bowl, mix your dry ingredients - oat flour, cinnamon, baking powder, and salt.

  2. Add in your wet ingredients and stir to combine. Add in the shredded apple and fold into the batter.

  3. Heat some coconut oil in a pan over medium heat. Pour 1/3 cup of batter in for each pancake. Cook until bubbles begin to form and then flip and cook for a couple minutes on the other side.

  4. For the topping, chop the other half of your apple and sautee in a pan with some coconut oil and cinnamon until soft. Top pancakes with apples, almond butter (or nut/seed butter of choice), and some maple syrup. Enjoy! Makes 4-5 pancakes.
