Banana Bread

Banana Bread | VG | GF | RSF

Ingredients

  • 4 over ripe bananas mashed

  • 1 tsp vanilla extract

  • 1/2 tsp cinnamon

  • 1 tbsp ground flax seed

  • 1 tsp baking powder

  • pinch of salt

  • 1/4 cup coconut sugar

  • 1/4 cup pure maple syrup

  • 1 1/2 cups organic oat flour

  • 1/2 cup organic spelt flour

  • 1/2 cup crushed walnuts

Instructions

  1. Pre heat the oven to 350 and line a loaf pan with some parchment paper. In a large bowl, mash up the bananas with a fork until smooth.

  2. Add in the vanilla, cinnamon, ground flax seed, baking powder, salt, coconut sugar, and maple syrup. Mix well until everything is combined.

  3. Add in the oat flour and spelt flour. Stir into the wet ingredients to form the batter and then add in the crushed walnuts. You could also add in some chocolate chips if desired!

  4. Pour the batter into the parchment lined loaf pan and bake at 350 for about 45 minutes. Check the center with a knife or toothpick and if it comes out clean, it’s done. Let it cool and then cut into slices and enjoy!
