Banana Pancakes

Banana Pancakes | VG | GF | RSF |

Ingredients

  • 1 cup oat flour

  • 1/4 cup almond flour

  • 2 ripe bananas (1 mashed and added to the batter, 1 sliced added to the batter and on top of the pancakes)

  • 1/2 cup water or non dairy milk

  • 1 teaspoon vanilla extract

  • 1/2 teaspoon cinnamon

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon salt

Instructions

  1. Start by adding one ripe banana to a small bowl and mash it until smooth. Add the vanilla extract and water or non dairy milk and combine well.

  2. In a large bowl, add in your oat flour, almond flour, cinnamon, baking powder, and salt. Stir to combine and then add in your wet ingredients. Slice up the second banana and add half of it to the pancake batter.

  3. In a pan over medium heat, add some coconut oil. Using a 1/4 cup scoop out the batter and pour into the pre heated pan. Cook on each side for a few minutes and place in the oven at the lowest temperature to keep warm until all the pancakes are ready.

  4. Top with maple syrup, more sliced banana, walnuts, etc. Enjoy!
