Peanut Butter Banana Baked Oatmeal

Peanut butter banana baked oatmeal | VG | GF | RSF |

Ingredients

  • 2 over ripe bananas

  • 1 cup unsweetened almond milk (or plant milk of choice)

  • 1 tablespoon maple syrup

  • 1 tablespoon chia seeds

  • 1/2 cup natural peanut butter

  • 1 teaspoon cinnamon

  • 1/4 tsp baking powder

  • 1 1/2 cup rolled oats

  • pinch of salt

Instructions

  1. Pre heat oven to 350. Grease an 8x8 baking dish with some coconut oil.

  2. Mash up the bananas in a large bowl. Add in almond milk, maple syrup, chia seeds, and peanut butter then stir to combine.

  3. Mix in the oats, cinnamon, baking powder, and salt.

  4. Pour mixture in the baking dish. Top with some more sliced banana (optional).

  5. Bake at 350 degrees for 20-25 minutes. Let cool for 5 minutes before cutting and serving.

  6. Top with more peanut butter, cinnamon, and hemp seeds (optional). Maple syrup would be great too. Enjoy!
