Blueberry Almond Butter Bars

Blueberry Almond Butter Bars | VG | GF | RSF | RAW |

Ingredients

  • 1 cup almond flour

  • 1 cup rolled oats

  • 1/2 cup raw almond butter (roasted is fine if you don’t care about the bars being raw)

  • 1/3 cup maple syrup

  • 1 cup fresh or frozen blueberries

  • 1 tablespoon chia seeds

  • 2 tablespoons maple syrup (optional for blueberry topping)

Instructions

  1. Line a loaf pan or baking dish with some parchment paper.

  2. In a food processor, add your almond flour, oats, almond butter, and maple syrup. Blend until a dough begins to form. Spread the mixture evenly into the loaf pan or baking dish and place in the freezer while you make the topping.

  3. In a small bowl, add your blueberries, chia seeds, and maple syrup (optional). Mash together with a fork into a jam like consistency. If using frozen blueberries, either let sit out until thawed or heat in the microwave or over the stove to soften.

  4. Take the base out of the freezer and pour the blueberry topping over the top. Spread into an even layer and put back in the freezer for about 2 hours to set.

  5. Take out once fully set, and cut into bars or squares. Keep stored in the fridge or freezer. Enjoy!

  • Strawberries, blackberries, or raspberries would also work great in place of the blueberries!
