Blueberry Pancakes

Blueberry Pancakes | VG | GF | RSF |

Ingredients

  • 1 cup oat flour

  • 1 very ripe banana

  • 1 tsp vanilla

  • 1 tbsp ground flax seed

  • 1/4 tsp cinnamon

  • 1/4 tsp baking powder

  • 3/4 cup unsweetened cashew milk (or any non dairy milk)

  • 1/2 cup fresh blueberries

Instructions

  1. If not using store bought oat flour, start by making that by adding one cup of rolled oats to a high speed blender. Blend on high into a fine flour.

  2. In a large bowl, mash up the ripe banana with a fork. Add in the vanilla, cinnamon, baking powder, and ground flax seed. Combine well.

  3. Add in the oat flour and cashew or other non dairy milk. Mix well until a smooth batter forms. Fold in the blueberries.

  4. In a pan over medium heat, add a little coconut oil. Using a 1/4 measurement, scoop out the batter for each pancake. Cook on each side for a few minutes.

  5. Top with desired toppings and enjoy! I used pure maple syrup, more blueberries, and hemp seeds. Peanut butter and other berries are amazing as well!
