Chewy Granola Bars

Ingredients

  • 2 cups rolled oats

  • 1/4 cup chopped walnuts

  • 1/4 cup coconut nectar

  • 1/4 cup date syrup

  • 2 medjool dates chopped

  • 3 tbsp pumpkin seeds

  • 2 tbsp chia seeds

  • 2 tbsp ground flax seeds

  • 2 tbsp almond butter

  • 2 tbsp chocolate chips

  • 1/2 tsp cinnamon

  • pinch of salt

Instructions

  1. In a large bowl, add in the oats, chopped walnuts, chopped dates, pumpkin, chia, and ground flax seeds, chocolate chips, cinnamon, and salt. Mix well.

  2. Add in the almond butter, date syrup, and coconut nectar. Combine everything well until it all begins to stick together.

  3. Line a loaf pan or baking dish with parchment paper. Press the granola mixture into the dish and spread into an even layer. Put in the fridge over night to set.

  4. Cut into bars and enjoy! Keep stored in the fridge.
