Coconut Snowballs

Coconut Snowballs | VG | GF | RSF |

Ingredients

  • 3/4 cup shredded coconut

  • 1/2 cup coconut butter

  • 2 tablespoons maple syrup

  • 1 teaspoon peppermint extract

  • pinch of salt

Instructions

  1. Add your coconut butter, shredded coconut, maple syrup, peppermint extract, and salt to a food processor.

  2. Process until the mixture is well combined and starts to form together.

  3. Using a tablespoon, scoop out the mixture and roll into 6 even balls. Coat with more shredded coconut and enjoy! Keep stored in the fridge.

*add more maple syrup for extra sweetness, more peppermint for a stronger mint flavor, or substitute with vanilla extract if desired.
