Ingredients

  • 1 1/2 cups oat flour

  • 1 tsp baking powder

  • pinch of salt

  • 1/2 cup natural peanut butter

  • 1/4 cup maple syrup

  • 1/4 cup coconut sugar

  • 2 tbsp water

  • 1 tsp vanilla extract

  • chocolate chunks or chips (as many as your heart desires)

Instructions

  1. Pre heat oven to 350 and line a baking sheet with some parchment paper. If you are making your own oat flour, add the oats to a blender and blend on high until a fine flour forms.

  2. In a large bowl, add in the oat flour, baking powder, and salt. Mix well.

  3. In a small bowl, add in the peanut butter, maple syrup, coconut sugar, water, and vanilla. Combine well until smooth.

  4. Pour the wet ingredients in the bowl with the dry ingredients and combine until the cookie dough comes together. Fold in your chocolate chunks or chips.

  5. Using a cookie scoop, scoop out the cookies and place on the baking sheet. Flatten each one a little as they will not spread out much in the oven. Bake at 350 for about 13 minutes. Let cool and enjoy! Keep stored in an air tight container at room temp or in the fridge for longer.
