Vegan Almond Joys

Ingredients

  • 1 1/4 cup unsweetened shredded coconut

  • 1/4 cup coconut butter

  • 1/4 cup coconut nectar

  • 1 tsp almond extract (or vanilla extract)

  • pinch of salt

  • raw almonds

  • 1/2 cup dark chocolate (about 1/2 a chocolate bar - I used a 100% cacao bar and added 2 tbsp date syrup for sweetness after it was melted)

Instructions

  1. In a food processor, add in the shredded coconut, coconut butter, coconut nectar, almond extract, and pinch of salt. Pulse a few times and then process until well combined. You may need to stop and scrape down the sides of the food processor and then process again until everything comes together.

  2. Using a tablespoon or cookie scoop, scoop out some of the mixture and form into small patties or cookie shapes. You should get about 7-8 of equal size. Place an almond in the middle of each one and put in the freezer for about 10 minutes.

  3. Break up your chocolate and melt in a small bowl. If you are using unsweetened chocolate, add in 2-3 tbsp of liquid sweetener. I used 2 tbsp of date syrup, but maple syrup, agave, or coconut nectar would all work well.

  4. Take the almond joys out of the freezer and coat each one in the melted chocolate. Place another almond on top and sprinkle each one with some pink himalyan salt if desired. Set them in the freezer again for a few minutes so the chocolate hardens. Enjoy! Keep stored in the fridge.
