Fudgy Vegan Brownies

Fudgy Vegan Brownies | VG | GF | RSF |

Ingredients

  • 1 cup oat flour

  • 1 cup almond flour

  • 1/2 cup cacao powder

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon salt

  • 3/4 cup coconut sugar

  • 1/4 cup melted coconut oil

  • 6 tablespoons aquafaba (liquid from a can of chickpeas)

  • 3 tablespoons date syrup

  • 1 teaspoon vanilla extract

  • 1/4 cup chocolate chunks/chips

Instructions

  1. Pre heat oven to 350 and line an 8x8 baking dish with parchment paper.

  2. In a large bowl, mix together your dry ingredients - oat flour, almond flour, cacao powder, baking powder, and salt.

  3. In a small bowl, mix together your coconut sugar, melted coconut oil, whipped aquafaba, date syrup, and vanilla extract.

  4. Add the wet ingredients in with your dry ingredients and combine well. The batter will be on the thicker side. Fold in your chocolate chips or chunks. I used the Hu brand baking chunks, but any vegan chocolate will work!

  5. Bake at 350 for 22-24 minutes. Let cool completely and then cut into brownies and enjoy! I stored mine in the fridge, but they should be fine in a sealed container at room temperature for a few days.
