Lemon Blueberry Bars

Lemon Blueberry Bars | VG | GF | RSF |

Ingredients

  • 1/3 cup tahini

  • 1/4 cup lemon juice

  • 1 tsp lemon zest

  • 1/4 cup + 1 tbsp maple syrup

  • 1 cup almond flour

  • 2 tbsp coconut flour

  • pinch of salt

  • 1/2 cup fresh blueberries

Instructions

  1. Line a loaf pan with some parchment paper and set aside. In a large bowl, add in the tahini, lemon juice, lemon zest, and maple syrup. Whisk everything together well until smooth.

  2. Then add in the almond flour, coconut flour, and salt. Combine the dry ingredients with the wet until a dough forms. Fold in the blueberries.

  3. Spread the mixture evenly into the parchment lined loaf pan. Top with extra lemon zest and blueberries if desired. Set in the freezer for 1-2 hours to firm up. Cut into bars and enjoy! These can be enjoyed straight from the freezer, but are also great if put in the fridge afterwards. They will be much softer almost like a cookie dough consistency. Keep stored in the fridge or freezer.
