Mini Pumpkin Chocolate Chip Muffins | VG | GF | RSF |

Ingredients

  • 1 cup organic oat flour

  • 1 tsp pumpkin pie spice

  • 1/2 tsp baking powder

  • pinch of salt

  • 1/2 cup pumpkin puree

  • 1/4 cup pure maple syrup

  • 1/4 cup water

  • 2 tbsp coconut sugar

  • 1 tsp vanilla extract

  • dark chocolate chips or chunks

Instructions

  1. Pre heat the oven to 350. If you are making your own oat flour, add one cup of rolled oats to a high speed blender and blend on high into a flour.

  2. In a large bowl, add in the oat flour, pumpkin pie spice, baking powder, and salt. Combine well.

  3. In a smaller bowl, add in the pumpkin puree, maple syrup, water, coconut sugar, and vanilla. Mix until smooth and then pour the wet ingredients into the bowl with the dry ingredients.

  4. Mix well until a smooth batter forms then add in as many chocolate chips or chunks as you’d like.

  5. Using a cookie scoop or tablespoon, evenly measure out the batter among 12 mini muffin tins. Bake at 350 for about 10-12 minutes and then let cool. Enjoy!
