Orange Cauliflower

Ingredients

  • 1 small head of cauliflower

  • 3/4 cup gluten free flour (or all purpose flour if not GF)

  • 3/4 cup unsweetened almond milk (or non dairy milk of choice)

  • 1/2 teaspoon garlic powder

  • salt , black pepper, and red pepper flakes to taste

  • 1 cup fresh squeezed orange juice (store bought would also work)

  • 1/2 cup maple syrup or agave

  • 1/4 cup water

  • 1/2 teaspoon orange zest

  • 1 teaspoon minced ginger

  • corn starch slurry (corn starch + water mixed together)

Instructions

  1. Pre heat oven to 400 degrees and line a baking sheet with parchment paper. Cut your cauliflower into bite sized florets.

  2. In a bowl, add flour, non dairy milk, garlic powder, salt, and black pepper. Stir together to form the batter.

  3. Coat the florets in the batter and place in a single layer on the baking sheet. Bake for 30-35 minutes flipping half way through.

  4. While the cauliflower is baking, make the sauce. Heat 1 tablespoon of avocado oil (or oil of choice) in a pan over medium heat. Add in the sauce ingredients and whisk together. Increase the heat and let the sauce come to a boil.

  5. Reduce heat and let the sauce thicken a bit. Once the cauliflower is done, add the florets into the pan with the sauce and coat well.

  6. Top with some green onions and sesame seeds if desired and serve over rice or quinoa. Enjoy!
