Raspberry Macadamia Nut Cookies | VG | GF | RSF
Ingredients
2 cups almond flour
1/2 tsp baking powder
pinch of salt
1/3 cup melted coconut oil
1/4 cup coconut sugar
1/4 cup date sugar
1/4 cup maple syrup
1/4 cup water
1 tsp vanilla extract
1 cup fresh raspberries
1/2 cup macadamia nuts
Instructions
Pre heat the oven to 350 and line a baking sheet with parchment paper.
In a large bowl, add in the almond flour, baking powder, and salt. Mix well and set aside.
In a small bowl, melt 1/3 cup of coconut oil. Add in the coconut sugar, date sugar, maple syrup, water, and vanilla. Combine well until smooth and then pour the wet ingredients in the large bowl with the dry ingredients.
Mix until the cookie dough comes together and then add in the fresh raspberries and macadamia nuts. Fold those in the cookie dough. Using a cookie scoop or tablespoon, scoop out the cookies onto the baking sheet.
Bake for about 14-15 minutes until golden brown. Let cool completely and then enjoy! Keep stored in an air tight container.
