Raw Pesto Pasta

Raw Pesto Pasta | VG | GF | RAW |

Ingredients

  • 3 small or 2 medium size zucchini spiralized into noodles

  • 1/2 cup fresh basil

  • 1/4 cup sunflower seeds (pine nuts, walnuts, pumpkin seeds would work as well)

  • Juice from 1/2 lemon

  • 2 cloves garlic

  • 4 tablespoons olive oil

  • 2 tablespoons water

  • 2 tablespoons nutritional yeast

  • Salt and black pepper to taste

  • veggies of choice to add to pasta (I used sun dried tomatoes , cherry tomatoes, kale, and sprouts)

Instructions

  1. First start by making your zucchini noodles with a spiralizer. Dry the zucchini as much as possible so the pasta does not turn out watery.

  2. Make the pesto in a high speed blender or small food processor. Add the basil, sunflower seeds, lemon juice, garlic, olive oil, water, nutritional yeast, salt and pepper. Blend until smooth.

  3. In a large bowl, add in the zucchini noodles, veggies of choice, and pesto. Mix together until everything is well coated. Top with sprouts if desired and enjoy!
