Ingredients
Cookies ~
1 cup rolled oats
1 flax egg (1 tablespoon ground flax seed + 3 tablespoons of water)
1 teaspoon cinnamon
1/2 cup chopped apple
3 tablespoons date caramel sauce
Caramel ~
1/2 cup medjool dates
1 tablespoon date syrup
dash of cinnamon
pinch of salt
water to thin
Instructions
Pre heat oven to 350 and line a baking sheet with some parchment paper.
Make the caramel sauce by adding all ingredients to a high speed blender or food processor. Start by adding a tiny bit of water and slowly add more if needed.
Make your flax egg by combining ground flax and water in a small bowl or cup. Let sit for 5 minutes.
In a large bowl, add oats, cinnamon, date caramel sauce, and the flax egg. Stir to combine thoroughly. Next add in the chopped apple and combine.
Form into small cookies and bake for 12 minutes. Top with the rest of the caramel sauce. Makes 5-6 cookies. Perfect for breakfast or a healthy dessert. Enjoy!
