Ingredients
1 1/2 cups + 2 tablespoons fine almond flour
1/2 cup cacao powder
1/2 teaspoon salt
2 teaspoons baking powder
8 tablespoons melted coconut oil
1 cup coconut sugar
1 teaspoon vanilla extract
1 teaspoon peppermint extract (substitute with more vanilla or just leave out if you’re not a fan of peppermint)
1 tablespoon maple syrup
4 tablespoons water
Chocolate chips (as many as your heart desires)
1-2 vegan candy canes crushed up (for peppermint cookies only)
Instructions
Pre heat your oven to 350 and line a baking sheet with parchment paper.
In a large bowl, add in your dry ingredients - almond flour, cacao powder, salt, and baking soda and stir to combine.
In a smaller bowl, melt the coconut oil and then add in the coconut sugar. Stir together until a wet sand consistency forms. Next add in the vanilla and peppermint extract, maple syrup, and water.
Combine the wet ingredients with the dry ingredients and mix until the cookie dough comes together. Fold in your chocolate chips.
Using a tablespoon, scoop out cookies and place them on the baking sheet. Flatten the cookie dough balls a little and then bake at 350 for 13-15 minutes.
Top with crushed candy canes and place on a cooling rack to cool. Enjoy!
