Peanut Butter Cookies

Peanut Butter Cookies | VG | GF | RSF |

Ingredients

  • 3/4 cup natural peanut butter

  • 1/2 cup coconut sugar

  • 1 cup gluten free flour (or all purpose if not GF)

  • 1/4 cup maple syrup

  • 4 tablespoons melted coconut oil

  • 3 tablespoons water

  • 1/4 teaspoon salt

  • 1/2 teaspoon baking powder

Instructions

  1. Pre heat your oven to 350 and line a baking sheet with parchment paper.

  2. In a large bowl, combine your dry ingredients - flour, salt, and baking powder.

  3. In a separate bowl, mix together the peanut butter, coconut sugar, coconut oil, maple syrup, and water.

  4. Add the wet ingredients to the dry ingredients and mix until a dough forms. Set in the fridge to chill for about 15 minutes.

  5. Using a tablespoon, scoop out the dough and form cookie balls. To get the traditional peanut butter cookie look, use a fork to press into the top of each cookie. Flatten each one slightly and bake at 350 for 12-14 minutes. Let cool on a cooling rack and enjoy!
