Ingredients

  • 1 cup almond flour

  • 1 cup rolled oats

  • 1/2 cup peanut butter

  • 1/3 cup maple syrup

  • 1 cup fresh raspberries

  • 1 tablespoon chia seeds

  • 2 tablespoons maple syrup (optional for the raspberry topping)

Instructions

  1. Line a loaf pan or other baking dish with some parchment paper.

  2. In a food processor, add your almond flour, oats, peanut butter, and maple syrup. Blend until a dough begins to form. Spread the mixture evenly into the loaf pan or baking dish and place in the freezer while you make the topping.

  3. In a small bowl, add your raspberries, chia seeds, and maple syrup (optional). Mash together with a fork into a jam like consistency.

  4. Take the base out of the freezer and pour the raspberry topping over the top. Spread into an even layer and put back in the freezer for about 2 hours to set.

  5. Take out once fully set, and cut into bars or squares. Keep stored in the fridge or freezer. Enjoy!

  • Strawberries, blackberries, or blueberries would also work great in place of the raspberries!
