Peanut Butter Brownies

Peanut Butter Brownies | VG | GF |

Ingredients

  • 2 cups almond flour

  • 1/2 cup cacao powder

  • 1/2 cup coconut sugar

  • 1/2 cup maple syrup

  • 1/4 cup liquid coconut oil

  • 2 flax eggs (2 tablespoons ground flax seed + 6 tablespoons water)

  • 2 teaspoons vanilla extract

  • pinch of pink himalayan salt (or any salt)

  • vegan chocolate chips (as many as your heart desires)

  • natural peanut butter (to swirl on top)

Instructions

  1. Pre heat the oven to 350 and line a 8x8 or 9x9 baking dish with parchment paper.

  2. Prepare the flax eggs by combining 2 tablespoons of ground flax seed with 6 tablespoons of water in a small dish. Let sit for 5 minutes.

  3. In a large bowl, add in the dry ingredients and mix together. Then add in the wet ingredients and combine.

  4. Add chocolate chips and fold into the batter. Pour into baking dish and drizzle on some peanut butter. Use a knife or toothpick to swirl the peanut butter around the brownies.

  5. Bake for 20-25 minutes. Let cool, cut, and enjoy! Store leftovers in the fridge for up to a week.
