Ginger Molasses Cookies

Ingredients

  • 2 cups oat flour

  • 1/2 cup almond flour

  • 1 tsp ginger powder

  • 1 tsp cinnamon

  • 1/2 tsp baking powder

  • 1/4 tsp baking soda

  • pinch of salt

  • 1/2 cup melted coconut oil

  • 1 cup coconut sugar

  • 1/4 cup molasses

  • 1/4 cup water

Instructions

  1. Pre heat the oven to 350 and line a baking sheet with some parchment paper.

  2. If you are making your own oat flour, add 2 cups of rolled oats into a high speed blender and blend on high into a smooth flour.

  3. In a large bowl, add in the oat flour, almond flour, baking powder, baking soda, ginger, cinnamon, and pinch of salt. Mix well.

  4. In a separate bowl, melt the coconut oil and then add in the coconut sugar. Mix well and then add in the molasses and water. Mix well until smooth.

  5. Pour the wet ingredients into the bowl with the dry ingredients. Combine everything until the cookie dough comes together. Using a cookie scoop, scoop the cookies out onto the baking sheet.

  6. Bake at 350 for about 13-15 minutes. Let cool and enjoy! I topped mine with a cashew based frosting just made with cashew butter, water, cinnamon, and a little pure maple syrup.
