Pumpkin Pancakes

Pumpkin Pancakes | VG | GF | RSF |

Ingredients

  • 1 cup oat flour

  • 1 tsp pumpkin pie spice

  • 1/4 tsp baking powder

  • pinch of salt

  • 1 over ripe banana mashed

  • 1/3 cup pumpkin puree

  • 1/2 cup water or non dairy milk

  • 1 tsp vanilla extract

Instructions

  1. In a large bowl, mash up the banana with a fork. Add in the vanilla, pumpkin, and water. Mix together until well combined.

  2. Add in the oat flour, pumpkin pie spice, baking powder, and salt. Combine the dry ingredients with the wet into a smooth batter.

  3. In a pan over medium heat, add a little coconut oil and cook each pancake for a few minutes on each side until golden brown on the outside and the middle is fully cooked.

  4. Top with desired toppings and enjoy!
