Caramel Apple Pancakes

Caramel Apple Pancakes | VG | GF | RSF

Ingredients

  • 1 cup oat flour

  • 1 apple

  • 1 over ripe banana

  • 1 cup water or non dairy milk

  • 1/4 tsp cinnamon

  • 1 tsp vanilla

  • 1 cup soft medjool dates + 1/2 cup water (for the date caramel sauce)

Instructions

  1. In a large bowl, mash up the over ripe banana. Add in the vanilla and cinnamon and mix well. Add in the oat flour and water and combine until a smooth batter forms.

  2. Take half of your apple and dice it up into small pieces. Fold the apple into the batter and set aside.

  3. Chop up the other half of the apple and cook over medium heat in a little coconut oil and cinnamon until soft.

  4. While the apples are cooking, make your date caramel sauce. In a high speed blender add in the pitted medjool dates and water. Blend on high until smooth.

  5. Once the apples are done, set those aside and cook your pancakes over medium heat for a few minutes on each side.

  6. Top pancakes with the date caramel and the cinnamon apples. Enjoy!
