Three Bean Chili

Ingredients

  • 1 sweet onion

  • 1 carrot

  • 1 cup frozen corn

  • 1/2 red bell pepper

  • 1 cup vegetable broth

  • 1 28 oz can crushed tomatoes

  • 1 15 oz can black beans

  • 1 15 oz can pinto beans

  • 1 15 oz can kidney beans

  • 2 cloves garlic

  • 2 tsp chili powder

  • 2 tsp cumin

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • salt and pepper to taste

  • green onion and cilantro for topping

Instructions

  1. In a pot over medium heat, add a little avocado oil. Dice up your onion and add it to the pot. Cook for a few minutes. While the onions are cooking dice up your bell pepper and carrot. Add the veggies to the pot with the onion and cook for a few more minutes.

  2. Add in the fresh minced garlic, chili powder, cumin, garlic powder, onion powder, salt, and pepper. Then add the corn to the pot and stir well. Cook for a few minutes and in the mean time, drain and rinse the beans.

  3. Add the kidney, pinto, and black beans into the pot with everything else. Then add in the crushed tomatoes and combine well. Lastly, add in the vegetable broth. Stir well, cover, and let simmer for a few minutes.

  4. Taste and adjust seasonings as desired. Serve with green onions, cilantro, and lime if desired. Enjoy!
