Ingredients
2 cups soft medjool dates
2 cups raw walnuts
2/3 cup cacao powder
2/3 cup unsweetened shredded coconut
2 tbsp cacao nibs
2 tbsp hemp seeds
3 tbsp date syrup
caramel ~
1 cup soft medjool dates
1 cup water
pinch of salt (optional)
toppings ~
raw pecans
chocolate chips (optional)
Instructions
If your dates are not very soft, soak them in water for 5-10 minutes. Line an 8x8 or 9x9 baking dish with some parchment paper.
In a food processor, add in the 2 cups of pitted medjool dates and process until they begin to stick together. Add in the walnuts, cacao powder, coconut, cacao nibs, hemp seeds, and date syrup. Pulse a few times and then process until everything begins to come together. You will most likely need to stop a couple times and scrape down the sides of the food processor.
Once the mixture begins to stick together when you press it together in your hands, transfer it to the baking dish. Press into an even and smooth layer. Set in the freezer while you make the caramel.
In a high speed blender, add in the 1 cup of pitted medjool dates along with the 1 cup of water and a pinch of salt if desired. Blend on high until you get a smooth but thick consistency.
Take the brownies out of the freezer, and spread the caramel over the top in an even layer. Top with pecans and chocolate chips (or cacao nibs), cut into squares, and enjoy! Keep stored in the fridge or freezer.
