Ingredients
Pancakes ~
1 flax egg (1 tablespoon ground flax mixed with 3 tablespoons water)
1 cup oat flour
1/4 cup almond flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 1/2 teaspoons beet powder
1 teaspoon vanilla extract
2 tablespoons date syrup
1 tablespoon agave
1/2 cup water
Icing ~
2 tablespoons cashew butter
2 tablespoons lemon juice
1 tablespoon date syrup
pinch of salt
splash of water to thin
Instructions
Make your flax egg by combining 1 tablespoon of ground flax with 3 tablespoons of water and let sit for 5 minutes to thicken.
Heat some coconut oil over medium heat in a large pan.
In a large bowl, add in the oat flour, almond flour, baking powder, salt, and beet powder. Mix everything together until well combined.
Add in your flax egg, vanilla, date and agave syrup, water, and stir into the dry ingredients.
Using a 1/4 cup measurement, scoop out some batter and cook each pancake for a few minutes on each side.
Make the icing in a small bowl by combining the cashew butter, lemon juice, agave, salt, and water together. Pour over pancakes and enjoy!
