Vegan Samoas

Ingredients

  • 1 cup unsweetened shredded coconut

  • 1 cup medjool dates

  • 1/4 cup vegan chocolate chips

  • 1 tablespoon coconut oil

Instructions

  1. Pre heat oven to 350. Spread the coconut out on a baking sheet and toast in the oven for about 3 minutes. Careful not to burn the coconut!

  2. Add the toasted coconut and the dates in a food processor. Pulse until a dough forms. Scoop out tablespoon sized cookies and place them back on the baking sheet. Use a straw to poke a hole in the middle of each cookie and then set in the freezer.

  3. Add the chocolate chips and coconut oil in a microwave safe bowl (you can also use the double boiler method on the stove). Heat in 30 second increments and stir in between so the chocolate doesn’t burn.

  4. Dip the bottom of each cookie in the melted chocolate and drizzle some on top. Pop back in the freezer for a few minutes to set. Enjoy!
