Peanut Butter & Banana Oat Muffins | VG | GF | RSF |

Ingredients

  • 3 over ripe bananas

  • 1/4 cup natural peanut butter

  • 1/4 cup unsweetened plant milk of choice

  • 1 flax egg (1 tablespoon ground flax + 2.5 tablespoons water)

  • 3 tablespoons maple syrup

  • 2 tablespoons melted coconut oil

  • 1 teaspoon vanilla extract

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon salt

  • 1 1/4 cup rolled or quick oats

Instructions

  1. Pre heat oven to 350. Prepare your flax egg by combining the ground flax with water and letting it sit for about 5 minutes.

  2. In a large bowl, add in the bananas and mash up. Add in peanut butter, plant milk, maple syrup, coconut oil, vanilla, baking powder, salt, and flax egg. Stir to combine.

  3. If using rolled oats, process them into smaller pieces. Add the oats into the mixture and stir together.

  4. Pour the batter evenly into 8 muffin cups. Bake at 350 degrees for 25 minutes. Drizzle more peanut butter on top and enjoy!
